Temperature Keeping

   Keeping food stored at the correct temperature is an important part of food safety.   If food is left at room temperature for more than three hours it must be disposed of as it has already begun to grow bacteria.  Leaving food out too long at room temperature can cause bacteria such as Staphylococcus aureus, Salmonella Enteritidis,Escherichia coli O157:H7, Campylobacter to grow to dangerous levels that can cause illness, and in extreme cases even death.
  Take special care with high-risk food
  •  Raw and cooked meat, including poultry.

 

  • Dairy based desserts like custard tarts and cheesecake.

 

  • Seafood.

 

  • Prepared fruit salads.

 

 

 

 

 

 

 

 

 

 

 

      

 

 

Danger Zone 

I  Food that is between 42 degrees and 140 degrees is in the "Danger Zone" or the temperature zone where bacteria grows the quickest.  In order to keep your food safe from bacteria you must move your food through the Danger Zone as quickly as possible or keep your food held at the correct temperature.  If you have food that has been left out for three or more hours, throw it away because even if you were to put it back into storage you coyuld still get sick fom it.
